Like Parmesan, but vegan and very nutritious

Nutritional yeast is highly prized in vegan cooking. It is reminiscent of the taste of Parmesan cheese and enhances all kinds of dishes: creams, soups, salads, baked vegetables and desserts. We can use it as a substitute for this cheese or another to give our recipes a touch of cheese flavor but without eating cheese, either because we are committed to a plant-based diet or because we prefer to avoid it for health reasons.

In addition, nutritional yeast is very nutritious and provides fiber, easily digestible proteins, B vitamins, essential amino acids and minerals. Therefore, we not only give flavour to dishes but also enrich them nutritionally.

VEGAN PARMESAN WITH NUTRITIONAL YEAST RECIPE

Making your own vegan Parmesan is very easy. You can sprinkle only nutritional yeast on your dishes but if you also add some cashews, garlic powder and a little sea salt, you will get even more of the Parmesan effect and it will be delicious.

Ingredients for 1 cup

  • 3/4 cup raw cashews
  • 3 tablespoons nutritional yeast
  • half a teaspoon garlic powder
  • half a teaspoon sea salt

Preparation

  1. Pour all the ingredients into a food processor.
  2. Blend until you have a smooth, powdery mixture.
  3. You have your vegan Parmesan. You can store it in the fridge, in a hermetically sealed jar. Use it within two weeks.
