Green gazpacho

This green version of the traditional gazpacho is rich in antioxidants and chlorophyll, nourishes your skin, purifies your body and gives your defenses a boost thanks to the effects of avocado, spinach and celery.

Ingredients

  • 3 celery sticks
  • 1 avocado
  • 1 lemon
  • 2 tablespoons olive oil
  • 1 tablespoon cumin
  • Spinach leaves
  • 500ml water
  • Salt

To decorate:

  • Onion sprouts
  • Cornflower or mallow
  • Rose petals

Preparation

  1. Pour the avocado, chop the celery and add them to the blender along with the spinach leaves, olive oil, cumin, water and salt.
  2. Grate the lemon peel and squeeze out its juice. Add it to the blender along with the rest of the ingredients to give the gazpacho a fresh touch.
  3. Whisk the ingredients together until smooth.
  4. Serve the gazpacho and give it your personal touch by garnishing it with olive oil, onion sprouts and the flower petals of your choice.
