How to make horchata at home, and without sugar!

Tiger nut horchata is a very refreshing and nutritious drink. It is native to the Valencian Mediterranean and is usually eaten in summer. But its consumption is spreading to other places and to any time of the year.

If you’re breastfeeding your baby, you’ll be pleased to know that tiger nuts are a galactogogue food. In other words, it stimulates the production of breast milk.

RECIPE TO PREPARE HOMEMADE HORCHATA WITHOUT SUGAR

This horchata recipe is easy, quick, sugar-free and with the possibility of making it at home like any other vegetable smoothie.

Ingredients

  • 100-120 gr tiger nuts
  • 1 litre mineral water
  • Water for soaking
  • 1 teaspoon ground cinnamon (optional)
  • 1 Medjoul date (optional)

Preparation

  1. Soak the tiger nuts in the fridge for 8-10 hours with water.
  2. Strain, wash and put in the blender cup.
  3. Add a litre of cold mineral water or 500 ml of natural water and 500 ml in cubes (previously frozen).
  4. Whisk on high for a couple of minutes.
  5. Strain with a bag of nylon plant-based milks and serve.
  6. If you want to sweeten, put back in the blender, add the cinnamon and/or date and beat for 1 minute.
  7. Serve cold or set aside in the fridge, maximum 3 days.
